Ingredient For Sardine Salad

  • 1 4-oz. sardines skinless, boneless, drained
  • 1/2 cup fennel bulb thinly sliced
  • 1/2 cup cucumber peeled and small diced
  • 1/4 cup red onion small diced
  • 1/2 cup avocado diced
  • 2 Tbsp Dill Vinaigrette (see below)
  • salt and pepper to taste
  • fresh dill for garnish chopped

Ingredient For Dill Vinaigrette

  • 6 Tbsp olive oil extra virgin
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp fresh drill finely minced
  • salt and pepper to taste

Instructions
 

Direction For Sardine Salad

  • In a medium bowl add sardines and break them up a bit with a fork.
  • Add sliced fennel bulb, diced cucumber, red onion and avocado and Dill Vinaigrette, toss.
  • Season with salt and pepper to taste, garnish with fresh dill and serve.

Direction For Dill Vinaigrette

  • Put all ingredients into a container with a lid, shake well. Refrigerate unused portion.
