Ingredients
  

  • 6 strips bacon cut into 1 inch pieces
  • 2 pounds sweet potatoes peeled and diced
  • 1 onion diced
  • 2 garlic cloves chopped
  • 1/2 tsp cumin toasted and ground
  • 4 eggs
  • salt and pepper for tasting
  • 2 green onions thinly sliced
  • 2 tbsp cilantro chopped
  • 1 jalapeno sliced
  • 1 lime cut into wedges
  • 1/2 cup guacamole
  • 1/3 cup creamy tomatillo ranch dressing

Instructions
 

  • Cook the bacon in a skillet and set aside on paper towels to drain, reserving 2 tablespoons grease in the pan.

  • Add the sweet potatoes and onions to the pan and cook until the sweet potatoes are lightly golden brown, about 5-7 minutes, mix and repeat until the sweet potatoes are tender, about 15-20 minutes.

  • Add the garlic, cumin and chili powder and cook until fragrant, about a minute, before dividing the sweet potatoes and bacon between four plates.

  • Fry the eggs as desired and place on the sweet potatoes along with the green onions, cilantro, jalapeno, guacamole and dressing.
